Cooking for one person is extremely difficult. I have found that the easiest thing to do is to meal prep. I have a few recipes that I will post that are excellent for reheating rather than having too much to eat and then throwing away. Many of these recipes are cheap and easy to cook and will last several days. There are some dishes which are easy to scale to one person but I find it great to have healthy meals to reheat, especially when I work so much. Otherwise it is easy to fall into the habit of eating ready meals all the time. However, if you are to need ready meals the best in the UK come from Marks and Spencer and they are often freezable and affordable!
